Ingredients for Puff Pastry Slices with Zucchini
- 1 roll puff pastry (rectangular)
- 1.1 lbs zucchini
- 7 oz scamorza cheese
- 4.2 oz cooked ham
- to taste salt
- 1 egg (for brushing the rolls)
How to Prepare Puff Pastry Rolls with Zucchini
Wash the zucchini. Trim the ends and, using a vegetable peeler or a mandoline, slice them very thinly lengthwise.
Lay out a rectangular sheet of puff pastry on the work surface. Cover the entire surface with zucchini slices in 2 layers, slightly overlapping each other.
Lightly salt the zucchini and cover them with slices of scamorza cheese or another soft, melty cheese.
Now add the slices of cooked ham. With the help of the parchment paper, gently roll the puff pastry from the longer side to form a filled roll.
Cut into slices about 3/4 inch thick. I got 13 slices, but it depends on the width of your puff pastry and how thick you cut them.
Arrange the Zucchini Rolls slightly spaced apart on a baking sheet lined with parchment paper, slightly spreading them.
Brush them with a beaten egg and then bake them in a preheated oven at 375°F (static mode) for 22-24 minutes.
Let them cool slightly and enjoy them still warm

Loredana’s Tips
If there are any leftover Rolls, store them in a container in the fridge for 1-2 days or you can freeze them. You just need to heat them for a few minutes in the oven or microwave
You can replace the cooked ham with speck or another deli meat and the scamorza with another soft, melty cheese
You can replace the egg used for brushing the puff pastry rolls with milk
