Light Pink Sauce or Light Cocktail Sauce


The light pink sauce or light cocktail sauce made without mayonnaise and without ketchup is a cream based on ricotta and tomato sauce with a velvety texture and delicate flavor.

It does not require cooking.

It’s perfect for replacing mayonnaise and ketchup, as well as béchamel and cooking cream.

Versatile:
• for dipping vegetables, seasoning salads and potatoes;
• for accompanying meat, fish, and eggs;
• for creaming pasta [you only need a couple of tablespoons] or for dressing it [using the ricotta weight as per your dietary plan];
• in place of béchamel and cooking cream.
• sauce for sandwiches;
• dressing for sandwiches, canapés and toast.

Adds creaminess to dishes with lightness.

Ingredients

For every 100 g of ricotta, 1 tablespoon of tomato sauce:

  • 3.5 oz cow's milk ricotta
  • 1 tbsp tomato sauce (homemade)
  • 7 oz cow's milk ricotta
  • 2 tbsp tomato sauce (homemade)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 1 pinch nutmeg (or cinnamon or turmeric or paprika or other spice)

Suggested Tools

  • Chopper or Mixer
  • Containers airtight

Preparation

  • Pour into the mixer:
    • the ricotta;
    • a pinch of salt;
    • a pinch of pepper;
    • a pinch of nutmeg [or cinnamon, turmeric, paprika or other spice according to taste and use];
    and blend.

    Add the tomato sauce [one tablespoon per 3.5 oz of ricotta] and blend.
    Color and density may vary depending on the consistency of the ricotta used and the amount of tomato sauce added.
    The density should be like mayonnaise, a bit more liquid if you intend to use it as béchamel or cooking cream.

    Your light pink sauce or light cocktail sauce or ricotta and tomato sauce cream is ready.

  • Store the sauce in the fridge in an airtight container or a small bowl sealed with plastic wrap.

  • • Penne in pink sauce;
    Shrimp cocktail.

  • • Greek yogurt;
    • Low-fat spreadable cheese.
