For this Grilled Zucchini Salad with Ham and Grana Cheese you can use any variety of zucchini you like best, I find the light ones perfect because they have less water and remain dry and crunchy when cooked.
You can use either cooked ham like we did, or raw ham, or even bresaola, and instead of Grana Padano, you can use Parmesan or Pecorino for an extra touch of flavor.
A few minutes of cooking and this grilled zucchini salad will be perfect to serve, perhaps enriched with some arugula or chopped nuts to add a crunchy note to everything.
