Chicken breast rolls with mortadella and pistachios… super easy, quick, and very tasty, perfect for dinner! They are prepared in a few minutes, then cooked in an air fryer or oven (I recommend the air fryer to save time and energy). Try this recipe, it’s really easy, affordable, and truly delicious!

Ingredients
- 10.6 oz chicken breast (in slices)
- 3.2 oz mortadella with pistachios
- 1.8 oz provola
- 0.7 oz crushed pistachios
- breadcrumbs
- extra virgin olive oil
- salt
Tools

- Baking Pan
- Cutting Board
- Toothpicks
Preparation
Arrange the slices of chicken on a cutting board, pound them slightly if they are too thick.
Sprinkle them with a little salt, then lay the mortadella and sliced provola on top (1).
Roll up the meat to form the rolls, secure them with toothpicks, and brush the surface with extra virgin olive oil.
Pass the rolls in the crushed pistachios, mixed with 1-2 tablespoons of breadcrumbs (2).
Place the rolls in a baking pan suitable for your air fryer (3).
Place the pan in the basket and cook at 200°F for 12-15 minutes. Adjust the times according to the thickness of the meat slices.
If you prefer to use the oven, cook your rolls at 180-190°C (356-374°F) for 20-25 minutes.
The chicken rolls with mortadella and pistachios are ready to be served… enjoy your meal!
Tips and Variations
If you prefer, you can cook the rolls directly in the basket. I preferred the pan to collect the melted cheese that escapes.
You can enrich the filling by spreading a layer of pistachio pesto on the meat.
You can substitute chicken with turkey or pork loin.
