Arugula and Tropea onions side dish, simple, fresh, quick and obviously no cooking required. It’s clear that I love onions, and I add them everywhere, both cooked and raw. Mainly the Tropea onions, which are sweet and easily digestible. I soak them for twenty minutes in water, changing it often. I dress with plenty of lemon juice, salt, oil, and freshly ground black pepper. I let it rest for ten minutes and when serving, I pour the seasoned onions over the arugula. Mix well and my side dish is easy and really quick to prepare.

Ingredients
Arugula and Onion Side Dish
- 2 Tropea red onions
- 7 oz arugula
- 2 lemons (juice)
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- to taste black pepper
Preparation
Wash the arugula and dry it, set it aside in a bowl.
Season the onions with salt, the juice of lemon, oil, and freshly ground black pepper
Combine the onions with the arugula.
