Ingredients

  • 2 1/2 cups Manitoba flour
  • 2/3 cup milk
  • 1/2 cup sugar
  • 1/2 cup chocolate chips
  • 5 tbsps butter (soft)
  • 1 packet dry yeast
  • 1 pinch salt
  • 1 egg
  • as needed milk (for brushing)
  • as needed chocolate chips

How to Prepare Cloud Brioche with Chocolate Chips

  • First, prepare the starter dough. In a bowl, add 2/3 cup Manitoba flour, 1 1/2 tbsps sugar, 2/3 cup warm milk, and one packet of dry yeast. Mix with the fork until you get a smooth dough.

  • Cover with plastic wrap or a dish towel and let it rest for 30 minutes.

  • Take the dough and add the remaining ingredients, except for the chocolate chips. Work the mixture for at least 10 minutes. You should obtain a smooth and homogeneous dough. You can knead by hand, with a stand mixer, or a dough hook.

  • Place the dough in the bowl, cover with plastic wrap, and let it rise until doubled in size. It will take about 3 hours.

  • After the rising time, take the dough and divide it into 5 equal parts. (I obtained 5 balls of about 4 1/2 oz each).

  • Flatten each ball with your hands on a lightly floured surface to form a circle. Spread the chocolate chips over the circle and gently press them to adhere well to the dough.

  • Fold the sides of the circle towards the center, then roll it up. You should form a sort of turnover. (You can watch this step in the video recipe above).

  • Place the 5 turnovers in a loaf pan previously lined with parchment paper. Cover with a dish towel and let it rise until doubled in size. It will take about two hours.

  • After the rising time, brush the surface of the brioche with milk and add the chocolate chips.

  • Bake in a preheated static oven at 350°F for 10 minutes and then at 320°F for 20 minutes.

  • Remove from the oven, let it cool, and serve.
