BAKED STUFFED TOMATOES the perfect recipe for summer

Delicious and tasty baked stuffed tomatoes. Summer rhymes with tomatoes, of all kinds, prepared in a thousand different ways. Tomatoes are rich in vitamins, minerals, and antioxidants like lycopene. These compounds can help protect against various diseases, including cardiovascular diseases and some types of cancer. Additionally, tomatoes are a good source of fiber and promote gut health. For the stuffing, I’ve simply used sliced white bread and a few other ingredients, and baking or air frying make them irresistible. Baked Tomatoes Ingredients

  • 5 San Marzano tomatoes
  • 4 slices white bread
  • 1 oz grated Parmesan cheese
  • 3.5 oz scamorza cheese
  • to taste extra virgin olive oil
  • 1 clove garlic
  • 1 sprig parsley
  • to taste salt

How to Prepare Stuffed Tomatoes for Summer

  • Wash the tomatoes. Cut them in half lengthwise. Using a knife and a teaspoon, scoop out all the tomatoes. Prepare the stuffing.

  • Crumble the slices of white bread finely. If you prefer, you can replace them with bread crumbs. Add a finely chopped garlic clove, scamorza in small cubes, chopped parsley, and 2-3 tablespoons of extra virgin olive oil. Mix.

  • Slightly salt the inside of the tomatoes. Fill the tomatoes with the stuffing using a teaspoon. Place them side by side in a greased baking dish.

  • Sprinkle the grated Parmesan on the tomato stuffing and then add a drizzle of oil. Bake the Tomatoes in the oven at 375°F for 16-18 minutes.

You can prepare the Stuffed Tomatoes in advance, store them in the fridge in a container, and reheat them for a few minutes in the oven or microwave.

You can replace the slices of white bread with 2 oz of bread crumbs.
