Fake Dove

Easter is certainly the most demanding time of the year from a culinary point of view.

For a Neapolitan like me, there are many traditional recipes to prepare, and they also require a lot of time. Just think of the casatiello, which I personally let rise for 24 hours to make it more digestible, the sweet casatiello, the pasta pastiera and the more classic grain pastiera (here the plural is necessary because each Neapolitan family usually bakes an average of 3 pastiere for personal use or to give to friends and relatives).

At Easter, of course, besides the above-mentioned preparations, the classic dove cannot be missing, but here I raise my hands and acknowledge my limits. I leave the great leavened products to those who have more knowledge than me in the subject, as well as suitable machinery.

However, nothing prevents me from preparing a fake dove for my girls.

A simple and quick dessert to prepare, but in its shape and flavors (though not in consistency!) it resembles the classic artisanal doves.

I prepare it by filling it with candied oranges and dark chocolate chips, then sprinkling the surface with almonds and sugar pearls.

Great to enjoy at breakfast in the days leading up to Easter, when the pastiere are still resting to settle their aroma and flavor.

Fake Dove

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/4 cups potato starch
  • 3 eggs
  • 1 cup sugar
  • 2/3 cup milk
  • 1/2 cup butter (softened)
  • to taste orange zest (grated)
  • to taste lemon zest (grated)
  • 1/3 cup candied orange (chopped)
  • 3/4 cup dark chocolate chips
  • 1 packet baking powder
  • to taste almonds
  • to taste sugar pearls

Tools

  • 1 Mixer
  • 1 Mold for dove

Steps

  • To prepare the fake dove, gather the sugar and softened butter in a bowl and, with the help of an electric mixer, blend them together.

     

    Then add the eggs one at a time, and when they are perfectly incorporated, add the milk alternating with the mix of flour and potato starch to which you have also added the baking powder.

    At this point, scent the dough by adding the grated zest of half an orange and half a lemon, the dark chocolate chips, and the chopped candied orange.

    Give a final stir with a spatula and pour all the mixture into the special dove-shaped paper mold.

    Finish by sprinkling the surface with almonds and sugar pearls to taste.

    Bake the fake dove in a preheated convection oven at 330°F (165°C) for 45-50 minutes, always performing the skewer test before removing it from the oven.

    Let the fake dove cool well on a rack before consuming it.
