Ingredients

  • 2 eggs
  • 2/3 cup sugar
  • 7/8 cup milk
  • 2/3 cup sunflower oil
  • 2.5 cups all-purpose flour
  • 1 packet baking powder
  • to taste fresh fruit

How to Prepare the Summer Bundt Cake with Fresh Fruit

  • In a bowl, add the eggs and sugar. Mix with an electric mixer.

  • Add the milk and oil. Mix with the electric mixer.

  • Add the flour and baking powder. Mix with the electric mixer, being careful not to create lumps.

  • Add the chopped fruit according to your taste. I added an apple, a peach, and two apricots. I also added some almond pieces since I had a packet in the pantry to finish. (If you don’t have almonds, you can skip them). Mix with a spatula.

  • Pour everything into a 9.5-inch bundt cake pan, previously buttered and floured. My pan doesn’t need to be buttered or floured. If you want to take a look, you can find it here.

  • Bake in a preheated static oven at 350 degrees Fahrenheit. Let it bake for about 30/35 minutes. Please check the baking times based on your oven.

  • Remove from oven, let cool slightly, and if you like, dust with powdered sugar.

  • Serve yourself.
