Soft Rolled Jam Cookies are cookies with a delicate taste. They are soft thanks to the presence of yogurt.
The preparation is very simple, just quickly mix the ingredients to obtain a dough similar to shortcrust pastry. I used jam to fill them, but you can fill them based on your taste. However, be careful not to overfill them, or the filling will spill out during baking.

Ingredients
- 2 cups plain yogurt
- 4 tbsps sugar
- 1.4 oz sunflower oil
- Half packet baking powder for desserts
- 3 cups all-purpose flour (you can go up to 4 cups)
- to taste lemon flavoring
- 1 cup jam

- 1 Baking sheet
- 1 Parchment paper
- 1 Rolling pin
How to make Soft Rolled Jam Cookies
In a bowl, add the yogurt, sugar, and oil. Mix with a fork.
Add 3 cups of flour, the baking powder, and lemon flavoring. (You can substitute the lemon flavoring with the grated zest of an untreated lemon).
Start kneading with your hands until you get a compact but soft dough. If the dough turns out too sticky to handle, you can add more flour, but do not exceed 4 cups.
Divide the dough into three equal parts. Roll them out with a rolling pin to obtain three small rectangles.
In the center of each rectangle, add the jam, then fold them over. Seal the edges well.
Place the three rolls on a baking sheet lined with parchment paper.
Sprinkle the surface with granulated sugar and bake in a preheated static oven at 356°F for about 20 minutes. Please check the cooking times based on your oven.
Remove from the oven, let cool, and help yourself.
