Pumpkin Banana Bread Recipe
Start the pumpkin banana bread preparation by peeling the bananas. Cut them into pieces and place them in a bowl.
Mash them with a fork.Add the pumpkin pulp, you can buy it ready or cook the pumpkin in the oven at 400°F for 40 minutes or steam for 20-30 minutes.
Mix the two ingredients to combine them. Also add the eggs to the bowl and mix well.
Continue with the sunflower oil, pouring it in slowly and stirring continuously. At this point, you can add the sugar, either white or brown sugar is fine as long as it is finely granulated.
Mix again until you get a homogeneous mixture. It’s time for the all-purpose flour: put it in the bowl with the baking powder and mix with a spatula until a fairly soft batter forms.
Finish the batter preparation by adding the spices: cinnamon and vanilla are fine, but if you can find them, I recommend pumpkin pie spices.
Transfer the banana bread batter to a 12-inch loaf pan greased or lined with wet and squeezed parchment paper.
Bake the pumpkin banana bread in a preheated static oven at 350°F for about 50 minutes.
Do the toothpick test before taking it out of the oven.
Let it cool slightly before slicing it.

FAQ (Frequently Asked Questions)
How can I store pumpkin banana bread?
After it has completely cooled, you can store the banana bread in an airtight container at room temperature for 2-3 days. If you prefer to keep it longer, you can freeze it by wrapping it well in plastic wrap and placing it in the freezer for up to 3 months.
Can I substitute all-purpose flour?
Yes, you can substitute all-purpose flour with whole wheat, oat, or spelt flour for a more rustic and fiber-rich version. Keep in mind that the texture may change slightly, so it might be helpful to add a little more liquid if necessary.
Is pumpkin banana bread suitable for children?
Yes, it is a perfect dessert for children, especially if you want to offer them a healthier and nutrient-rich snack. You can also slightly reduce the amount of sugar if you prefer a less sweet version.
Can I use bananas that aren’t very ripe?
Ripe bananas give the banana bread sweetness and softness, so it’s best to use them when they are well ripened. If you have slightly unripe bananas, you can ripen them quickly by placing them in an oven at 300°F for 10-15 minutes, until they turn black and soft.
