PUMPKIN CORDON BLEU – crispy and light in air fryer

Ingredients

  • 1 boiled potato
  • 7 oz steamed or baked pumpkin
  • 2 tbsps grated cheese
  • 2 tbsps bread crumbs
  • 1 clove minced garlic
  • 1 bunch chopped parsley
  • to taste aromatic salt
  • 1 egg
  • 2 slices ham
  • 1 slice cheese
  • to taste corn flakes

Steps

  • Pour the blended pumpkin and potato into a bowl. Add the egg, grated cheese, aromatic salt, and breadcrumbs crushed with garlic and parsley.

  • Mix everything well and let it rest for 10 minutes.

  • Take handfuls of the mixture, place half a slice of ham and 1/4 slice of cheese in the center, and cover with more mixture.

  • Repeat the process until the mixture is finished.

  • Roll the cordon bleu in the corn flakes crumbled by hand.

  • Place them in the air fryer basket, spray a little oil, and cook for 10 minutes at 392°F, then turn them over and cook for another 5 minutes at the same temperature.

• For a vegetarian version, omit the ham and add a mix of cheeses.
