Stuffed Zucchini Flan

With the arrival of the warm season, zucchinis make their appearance. This Stuffed Zucchini Flan is perfect for a lunch or dinner with friends and family, perfect when hot and gooey but also delicious at room temperature.

In reality, it would be more appropriate to call it a casserole of zucchinis, but the essence is the same: grated zucchini, well squeezed, grated cheese, eggs, and flour, and then the magic happens in the oven.

You can vary the stuffing with the cheese you prefer as long as it’s not buffalo mozzarella, which would release too much water. Instead of cooked ham, you can use Milano salami, speck, or even prosciutto for extra flavor.

Ingredients for Stuffed Zucchini Flan

  • 3 zucchinis (medium-large)
  • 3 eggs (large)
  • 1/2 cup all-purpose flour
  • 1 1/2 oz Grana Padano cheese, grated
  • 3 1/2 oz cooked ham
  • 3 oz scamorza cheese (smoked if desired)
  • 2 pinches salt
  • 1 pinch black pepper (ground)
  • 1 tsp chopped parsley

Steps for Stuffed Zucchini Flan

  • Wash, trim, and grate the zucchinis with a coarse grater.

  • Place the grated zucchinis in a fine-mesh sieve, letting them drain their water for at least 20 minutes.

  • Squeeze the zucchinis well, place them in a large bowl, add eggs, grated Grana Padano, flour, and season with salt, pepper, and chopped parsley.

  • Mix very well and in the meantime preheat the oven to static mode at 356°F.

    Line a 24 cm loaf pan with parchment paper, pour in half of the zucchini mixture.

  • Cover with cooked ham, scamorza, and pour the remaining mixture, leveling the surface.

  • Bake the stuffed zucchini flan on the center rack of the oven for 35 minutes, remove from oven and let it cool slightly before turning it out onto a serving dish.

  • You can serve it with béchamel spread on top.

Tips, Variations, and Storage

You can use light zucchinis which are less watery than dark ones.

For more flavor, replace Grana Padano with Pecorino.

In the zucchini flan, you can replace cooked ham with speck, prosciutto, or salami.

If you prefer, you can brush the loaf pan with oil and sprinkle it with breadcrumbs.

Store it in the fridge in an airtight container for up to 2 days.
