A simple and delicious appetizer idea that fits any menu… Potato puff pastry bites, quick and tasty, made with puff pastry, thinly sliced potatoes, and aromatic herbs. They are prepared in just a few minutes, just the time to slice the potatoes and place them on the pastry, then bake them in the oven. I used new potatoes and left the skin on because it makes them even more flavorful, but you can use the potatoes you have available and peel them. Try this recipe, it’s easy but truly tasty!

Ingredients
- 1 roll puff pastry (rectangular)
- 3.5 oz potatoes
- aromatic herbs (rosemary, thyme, oregano or others)
- extra virgin olive oil
- salt

- Baking tray
- Mandoline or slicer
- Bowl
- Parchment paper
Preparation
Wash the potatoes thoroughly and dry them. If using new potatoes and you are sure of their source, you can leave the skin on, otherwise peel them.
Unroll the puff pastry on the work surface and divide it into 8 rectangles (or 6 if you prefer).
With the edge of a teaspoon, make a slight incision to outline the border of each rectangle. Alternatively, you can fold the pastry all around.
Transfer the puff pastry onto the baking tray lined with parchment paper.
Arrange the potato slices on the rectangles, slightly overlapping them.
Place the tray in a convection oven at 375°F and bake for about 20 minutes, or until the pastry is golden and the potatoes are cooked.
The potato puff pastry bites are ready to be served!
Tips and Variations
The potato slices must be very thin, otherwise they won’t cook in the oven. If you can’t slice them thinly and evenly, I recommend boiling them for a few minutes in salted water before placing them on the pastry.
You can flavor with rosemary, thyme, oregano, marjoram, parsley, chives, or other herbs to taste, dried or fresh. You can also add some garlic powder if you like.
In the last few minutes of baking, you can add strips of speck or small cubes of provola cheese on top of the potatoes.
