- 10.5 oz agretti
- 5.3 oz red cherry tomatoes
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic
- 7 oz water
- to taste salt
- 2 tablespoons breadcrumbs

How to Prepare Sautéed Agretti with Cherry Tomatoes and Breadcrumbs
Cut off the woody end, and after checking them, immerse them in a bowl full of water and let them soak for a few minutes. This way, any residual dirt will detach from the vegetable and settle at the bottom. Rinse them under running water and leave them to drain in a colander. Now wash the tomatoes, dry them, and cut them in half.
Place two garlic cloves inside a high-sided non-stick pan and add the cherry tomatoes. Salt them, sauté for a few minutes over high heat, and turn off the heat only when they have softened.
Remove the tomatoes from the pan and place them in a small bowl. In the same pan, add the agretti along with the water needed for cooking and a pinch of salt.
Place on high heat, covering with a lid, preferably transparent, and bring to a boil. At this point, remove the lid, lower the heat slightly, so they cook without the water evaporating quickly. After about 15 minutes, the agretti should be ready, and the water almost entirely gone. Add the already cooked tomatoes and season for 5 minutes.
Turn off the heat and sprinkle with breadcrumbs, then serve.

Tips and Storage
The sautéed agretti can be stored in the refrigerator for about two days, but place them in an airtight container.
If you want to prepare in advance, maybe for a lunch or dinner, make them without adding the breadcrumbs. Add it at the last moment, when you reheat them.
If you like, you can enrich them with pine nuts and raisins.
