The preparation is very simple: we make the pizza dough and let it rise, or alternatively, we can use a ready-made pizza dough roll. In the center, place a bowl without cutting into the dough, which will indicate the length of the slices. With a pizza cutter, create eight slices starting from the center. Around the ring, distribute the tomato sauce seasoned with oil, salt, pepper, oregano, speck, and grated mozzarella. Pull each slice from the center toward the outer crust and bake the pizza at 392°F (200°C) for 15-20 minutes.
All it takes is a bit of skill and imagination even in the filling to create a pizza wreath that will be perfect to serve for the classic Saturday night pizza or for the holiday table. All that’s left is for you to try it!

- 5 oz whole wheat flour
- 3/4 cup water
- 1 tbsp extra virgin olive oil
- 1 tsp dry yeast (or 1/4 oz of fresh yeast)

- 5 oz mozzarella for pizza
- 3 oz diced speck
- dried oregano

Steps to make the Pizza Wreath
Prepare the Pizza Wreath starting from the dough preparation. Dissolve the dry yeast in water and let it rest for 5 minutes.
Pour both flours, both the all-purpose flour and the whole wheat flour, into a bowl, add the water with the yeast and start mixing first with a fork and then with your hands. Also add the oil and work all the ingredients well until they are incorporated together. Finally, add the salt, form a dough ball, place it in an oiled bowl and cover it with plastic wrap. Let it rise in a warm and dry place until doubled.
Roll out the dough on a sheet of parchment paper starting with your fingertips from the center and moving outward to give it a circular shape.
With a bowl or plate about 7 inches (18 cm) in diameter, mark the central part of the pizza without cutting it.With a pizza cutter starting from the center of the pizza, cut out 8 slices reaching the edges marked by the bowl and therefore leaving a ring intact.
Season the tomato sauce with oil, salt, pepper, oregano, and distribute it on the pizza ring leaving the slices and the outer crust free of seasoning. Also add the speck and grated mozzarella.
Bring each slice towards the outer pizza and secure it well to the crust.
Bake the Pizza Wreath in a preheated oven at 392°F (200°C) for about 15-20 minutes.

You can store this pizza in the fridge for one or two days, or alternatively, freeze it.
You can prepare the dough in advance and leave it in the fridge for up to 12 hours. Then leave it at room temperature until it completes rising.
If you want, you can make the pizza dough gluten-free.
You can also use a ready-made pizza roll, easily found in the refrigerated section, or alternatively, use a puff pastry or shortcrust pastry roll. Naturally, in this case, the cooking time will vary slightly.
For the topping, you can vary by adding ingredients you prefer, such as cooked ham, salami, smoked salmon, or green or black olives, artichokes, grilled vegetables, etc.
