Strawberry and Sugar Sauce

The Strawberry and Sugar Sauce is great for filling or topping any kind of dessert. A quick but delicious recipe, made simply with sugar and fresh fruit. Since I don’t like to puree the fruit because I like to feel it under my teeth and see it when I scoop it up with a spoon, in this recipe I found the right compromise, leaving some strawberries to cut into small pieces. Usually, when I get my hands in dough, in any kind of preparation, I don’t limit myself to the minimum quantities because I try to preserve almost everything I cook.   • 4 cups strawberries
  • 1 cup sugar
  • Half lemon juice

How to Prepare Strawberry and Sugar Sauce

Remove the stalk from the strawberries, but make sure to choose them bright red and ripe, as they will definitely be sweeter and more fragrant. Gradually place them in a bowl full of water so that any possible soil residues can settle on the bottom. Rinse them under running water and let them drain without drying them. At the end of this first operation, if you like it as I do, set aside a few strawberries.

Place the strawberries in the blender, add the sugar, the juice of half a lemon already squeezed (free from any seed, even the smallest), and blend finely.

Pour the obtained smoothie into a high-sided saucepan, clean the blender glass with one or two tablespoons of water, and add it to the rest. At this point, take back the strawberries set aside, cut them into small pieces, and add them to the sauce as well.

Cook over low heat, and as soon as it starts to boil, count about 10 minutes of cooking, or until it reaches the desired consistency. If you like it thicker, let it go for a few more minutes. Stir continuously to make sure it doesn’t stick to the bottom of the pot.

In any case, the real density of the sauce will only be known once it has cooled, and if it should be more like jam, add a bit of water and let it boil for a minute.

The ideal consistency is that of a kind of syrup.

The Strawberry and Sugar Sauce lasts several days in the refrigerator because it contains sugar, which is a natural preservative.
