Ingredients

  • 1.75 oz grated Parmesan
  • 2 tbsps breadcrumbs
  • 2 tbsps extra virgin olive oil
  • 1 clove garlic

How to Prepare Gratin Asparagus with Hard-Boiled Egg

First, bring a pot of water to a boil and cook the egg for 8 minutes.

Open the bunch of asparagus, remove the woody part and use a peeler to gently shave the end. Dip them in water for a few minutes to soften and loosen any soil, then rinse under running water and dry thoroughly with a kitchen towel or paper towels.

Now arrange the asparagus on a parchment-lined baking tray. Drizzle with extra virgin olive oil and massage with your hands to coat each spear. Add half the Parmesan, breadcrumbs, and minced garlic. Mix everything with your hands for even distribution.

Season with salt and sprinkle the remaining Parmesan and breadcrumbs over the asparagus. Finally, crumble a hard-boiled egg on top and add fresh mint leaves.

Before baking in a preheated oven at 356°F, drizzle with more olive oil and bake in fan mode for about 15 minutes or until golden brown.
