NOTES

In the culinary tradition of the Roman Jewish community, agretti are one of the main dishes served for Shabbat, the day of rest observed every Saturday. Although not a typical Kasher vegetable, the use of monk’s beard in the kitchens of the ghetto dates back to ancient times.
