Ingredients
- 2 potatoes
- 2 carrots
- 1 onion
- 1 stalk celery
- 100 g green beans
- 150 g savoy cabbage
- 1 teaspoon tomato paste
- 2 tablespoons olive oil
- to taste salt
- to taste black pepper
- 1 stock cube
- 2 tablespoons grated Parmesan cheese

Steps
PREPARE THE VEGETABLES
Peel the potatoes and cut them into cubes.
Finely chop the onion.
Peel the carrots and slice them.
Cut the celery stalk into pieces.
Trim the green beans and cut them into pieces.
Cut the savoy cabbage into strips.
COOK THE SOUP
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
Add the potatoes, carrots, celery, green beans, savoy cabbage, and tomato paste, and mix well. Let it flavor for a few minutes, then add the stock cube and pour in enough water to completely cover all the ingredients. Stir gently again.
Bring to a boil and then reduce the heat. Let it simmer over medium-low heat until the vegetables are tender. Add more water if necessary.
Adjust salt and pepper, add the Parmesan, stir, and serve hot accompanied by croutons or slices of bread.
