The tomato rustic bread is made with a focaccia-like dough, filled with tomato and cooked ham. Naturally, you can fill it according to your taste.

Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup water
  • 1 1/2 tbsps extra virgin olive oil
  • 1 tsp salt
  • 1 packet instant yeast for savory preparations
  • as needed tomato purée
  • as needed salt
  • as needed extra virgin olive oil
  • 1 3/4 oz cooked ham (diced)
  • 2 slices emmental cheese

How to Prepare Tomato Rustic Bread

  • In a bowl, combine the flour, water, oil, and salt. Stir with a spoon.

  • Add the yeast and mix with the spoon. When you can no longer do so, continue kneading by hand until you get a smooth dough.

  • Line a 12.5-inch round baking tray (the kind used for pizza) with parchment paper and oil it.

  • Roll out the dough with your hands inside the tray. (To help, also add a little oil on top).

  • On half of the circle, add the tomato purée, salt, a drizzle of oil, diced cooked ham, and the cheese. I used emmental cheese.

  • Fold over to form a large calzone. Seal the edges well. Grease the surface with a drizzle of oil and bake in a preheated static oven at 356°F. Bake for about 30 minutes. Please check the cooking times based on your oven.

  • Remove from the oven and serve. It’s good both hot and cold.
