Ingredients

  • 7 oz cookies
  • 7 tbsp butter (melted)
  • 9 oz mascarpone
  • 7 oz heavy cream
  • 5 strawberries
  • 5 oz white chocolate
  • 2 tsp butter
  • 2 tbsp milk

How to Prepare the Strawberry Cold Cake

  • In a bowl, place the crushed cookies and melted butter. Mix with a spatula.

  • Pour everything into a 8-inch springform pan, previously lined with parchment paper. Compact well and let it rest in the refrigerator for at least half an hour.

  • In a bowl, place the mascarpone and cream. Whip everything well with an electric mixer.

  • Add 4/5 chopped strawberries.

  • In a saucepan, place the chopped white chocolate, butter, and milk. Move to the stove and melt the chocolate. Stir continuously. (I recommend melting the chocolate as the first step so that it has time to cool down).

  • Also add the melted chocolate and mix with a spatula with gentle movements from bottom to top to prevent the mixture from deflating.

  • Pour everything into the pan over the cookie base. Level well and let it rest in the refrigerator for about 3/4 hours.

  • Before serving, decorate according to your taste. I decorated with strawberries.
