Tips

The seasoned breadcrumbs you see among the ingredients I often prepare and keep ready in the freezer. This is how I do it: I create a mix with 3.5 oz of breadcrumbs, about 0.7 oz of fresh chopped parsley, and 2 cloves of minced red garlic. I mix everything and keep it in the freezer, very useful in many preparations (from vegetables to meat to fish for gratin!) Sometimes I also add a pinch of salt to the mix.
