Ingredients

  • 2 carrots
  • 3 potatoes
  • 3.5 oz frozen peas
  • 1 stalk celery
  • Half onion
  • 1 bouillon cube (vegetable)
  • 2 tbsps olive oil
  • 1 tsp tomato paste
  • 8.8 oz spaghetti (broken)

Steps

  • Peel the carrots and potatoes and dice them.

    Thinly slice the onion and chop the celery stalk.

  • In a large pot, heat the olive oil over medium heat. Add the onion and celery and sauté until they become transparent.

  • Add the carrots, potatoes, and peas, and stir to combine the flavors.

  • Add the tomato paste and bouillon cube and blend with a wooden spoon.

  • At this point, add enough water to the pot to completely cover the vegetables. Stir and bring the soup to a boil.

    Lower the heat and let simmer with the lid on over medium-low heat until the vegetables are tender.

  • Add the broken spaghetti to the pot and continue cooking according to the package instructions. If necessary, add half a glass of water.

  • Adjust seasoning with salt and serve the hot soup. Enjoy your meal.
