Ingredients for Pumpkin and Cheese Toast

  • 8 slices sandwich bread
  • 1.1 lbs delica pumpkin
  • 1 white onion
  • 1 sprig rosemary
  • 8 slices cheddar
  • to taste salt
  • to taste black pepper
  • 1 tablespoon grated parmesan

Pumpkin and Cheese Toast Recipe

  • Start the preparation of the pumpkin and cheese toasts by cooking the pumpkin.
    After cutting it into pieces, place it in a pot with a white onion quartered and a sprig of rosemary.
    Cover with water and cook for 20-25 minutes.
    Drain, remove the rosemary branches and blend everything with an immersion blender.
    Season with salt and black pepper and set aside.

  • Line a baking tray with parchment paper and place 4 slices of sandwich bread on it.
    Spread a generous tablespoon of pumpkin puree on each slice.

  • Continue with the cheddar: I used sliced cheddar but grated cheddar works as well.
