The beef carpaccio with apples is a main dish or an appetizer to bring to the table on different occasions. A very easy and quick dish to prepare and also very versatile, hazelnuts can be replaced with other nuts like almonds, walnuts, or pistachios. You can add some Parmesan, Grana, or Pecorino flakes. You can also change the seasoning, instead of lemon, a good organic orange. Pair it with roasted cauliflower or grilled fennel.

Ingredients
- 9 oz smoked beef
- 1 apple
- 1.75 oz hazelnuts
- 1 sprig rosemary
- 1 lemon
- 1 small piece ginger
- 4 tbsps extra virgin olive oil
- salt

- 1 Bowl
Steps
Place the slices of smoked beef carpaccio on two plates and set aside.
Chop the rosemary and grate the lemon zest and ginger.
Combine in a bowl and add salt, lemon juice, and oil.
Mix with a fork and set aside.
Peel the apple, remove the core, and dice it.
Season the apple with the previously prepared emulsion.
Distribute the apple over the smoked beef carpaccio.
Toast the hazelnuts, let them cool slightly, and chop them coarsely with a knife.
Garnish the carpaccio with the toasted hazelnuts and serve.
Tips
It is advisable to consume it within 12 hours.
Hazelnuts can be replaced with other nuts like walnuts, almonds, or pistachios.
