If you want to color the leaves that will decorate your tart, remember to set aside 1.75 oz of dough for each color you intend to use before letting the pastry rest. In my case, I used a few drops of orange food coloring for 1.75 oz of dough and 1/2 teaspoon of unsweetened cocoa powder for another 1.75 oz of dough.
