The Soft Breadsticks with Whole Wheat Flour and Pumpkin Seeds are the perfect recipe for those who love to eat bread but discard the crumb. I practically prepared a dough based on 5-cereal whole wheat flour to which I added pumpkin seeds, then rolled out sticks similar to breadsticks, and after a 4-hour leavening, I baked them in the oven. Ingredients for 12 Soft Breadsticks

  • 2 cups whole wheat flour (5-cereal)
  • 1/3 cup all-purpose flour
  • 3.5 tbsp extra virgin olive oil
  • 2/3 cup water (lukewarm)
  • 0.07 oz fresh yeast
  • 1 tsp fine salt
  • 1/3 cup pumpkin seeds

Steps

  • Pour the flours into the bowl, add the crumbled fresh yeast, lukewarm water and start mixing the ingredients, then add the oil and the salt.

  • Add the pumpkin seeds and finish kneading by placing the dough on the work surface. Once a soft loaf is obtained, immediately divide it into sticks. Gradually place them on the baking sheet with the base covered with parchment paper and let rise for 4 hours, covered with plastic wrap. After the leavening, bake in a preheated static oven at 350°F and cook for 20 minutes. Once cooled, they can also be frozen.
