Ingredients

  • 4 zucchini
  • 1 oz oz breadsticks (or taralli)
  • 0.5 oz oz almonds
  • 1 clove garlic
  • lemon zest
  • grated Grana Padano (to taste)
  • herbs (parsley, basil, thyme or other)
  • extra virgin olive oil
  • salt

Preparation

  • Wash the zucchini, remove the ends, and cut them into regular slices.

    Place them in a large pan with a drizzle of oil and a pinch of salt. Sauté over high heat for 4-5 minutes, turning them frequently so they don’t burn.

  • Break some breadsticks (or taralli, or other dry bread) into pieces, and put them in a blender with the almonds, one clove of garlic, and a bunch of parsley or other herbs to taste.

    Blend for a few seconds until you get a not-too-fine crumb.

  • Line a baking tray with parchment paper. Arrange the zucchini in a single layer (1).

    Cover them with the crumb, then sprinkle with grated lemon zest, a bit of Grana Padano (if you like), a pinch of salt, and a drizzle of oil (2).

  • Put the tray in a fan oven at 375°F and gratinate for about 15 minutes, or until the zucchini are golden and crispy.

  • The simple gratinated zucchini are ready, you can serve them hot or warm, alongside all main dishes.

Tips and Variations

You can use the classic zucchini with dark green skin, Roman zucchini with lighter skin, or trombetta zucchini.

You can flavor the breading with the herbs you have available: parsley, basil, thyme, mint, or others.

Instead of breadsticks, you can use taralli or other dry bread (even a mix of different types if you have leftovers to use up). Alternatively, you can grate stale bread.

If you don’t want to turn on the oven, you can use an air fryer, adjusting the times for your model.
