Chicken Sandwich

Then I suggest a tasty chicken sandwich packed with other ingredients, perfect for such an occasion. To be honest, it’s perfect even if you’re staying home and don’t feel like cooking elaborate dishes. Follow me into the kitchen and let’s see how to prepare it.

Ingredients for the Chicken Sandwich

For these chicken sandwiches, I recommend using pita bread or small round focaccias. If you want to make pita bread at home, you can find the recipe by clicking HERE.

  • 2 round buns (pita bread or small focaccias)
  • 4 slices chicken breast (very thin)
  • 2 zucchini (medium)
  • 2 slices emmental (or scamorza)
  • 1 clove garlic
  • tomato paste
  • oregano
  • extra virgin olive oil
  • salt

  • 1 Deep Plate
  • 1 Grill Pan
  • 1 Small Bowl
  • 1 Brush

Preparation of the Chicken Sandwich

  • Pour a few tablespoons of oil into a deep plate, add a peeled and chopped clove of garlic, a pinch of salt, and a pinch of oregano. Mix, then marinate the chicken breast slices in it for at least fifteen minutes.

  • Meanwhile, trim the zucchini, wash them, and slice them lengthwise into not-too-thin slices. I recommend using a knife instead of a mandoline.

  • Heat a ridged grill pan very well and grill the zucchini on both sides, then set them aside.

  • After the marinating time, drain the chicken breast slices and grill them on the same grill pan used for the zucchini.

  • In a small bowl, mix a generous tablespoon of tomato paste with a tablespoon of oil, a tablespoon of water, and a pinch of oregano.

  • Cut each bun in half and brush the inner parts with this sauce (keep a little aside for the tops or make some more on the fly).

  • Now proceed with the FILLING: make a layer of grilled zucchini and lightly salt them, cover with 2 grilled chicken slices, and finally add a large slice of emmental cheese.

  • Close the chicken sandwich, brush the top with the leftover tomato sauce, and sprinkle with more oregano.

  • Proceed the same way with the second chicken sandwich.
