A fresh and tasty summer recipe, very quick to make. The melon, cucumber, and feta salad is simple, cheerful, and colorful… it is prepared in a few minutes and is perfect for a light lunch, either at the office or at the beach. All you need is a nice sweet melon, a couple of fresh cucumbers, and a few other ingredients… try this delicious salad!

Ingredients
- Half melon
- 2 cucumbers
- 5.3 oz feta
- 2 tbsp black olives (or Taggiasca olives)
- as needed mixed salad greens (to taste)
- extra virgin olive oil
- salt
- pepper
Tools

- Vegetable peeler
- Knife
Preparation
Cut the melon open, remove the seeds and peel it.
Using a vegetable peeler, peel the cucumbers.
Rinse the salad greens and dry them with a salad spinner.
Cut the melon into slices, then into chunks. Cut the cucumbers into thin slices.
Pat the feta dry with paper towels, then crumble it with your hands or cut it into small cubes.
Drain the olives well from the brine or oil.
Take a serving tray or two flat plates.
Arrange the salad greens, then add the melon and cucumbers. Season with salt, pepper, and extra virgin olive oil.
Finally, sprinkle with the feta and olives.
Your melon, cucumber, and feta salad is ready to be served… a tasty and light cold dish, perfect for the summer season!
Tips and Variations
The addition of feta is optional, you can omit it or replace it with other cheeses, like mozzarella.
You can use classic cut salad greens, lamb’s lettuce, radicchio, or lettuce.
You can season with a pinch of chili pepper or your choice of herbs.
Choose a sweet and juicy melon, at the right stage of ripeness (in my case, I chose a Mantuan IGP melon).
I recommend assembling the salad at the moment, but if you need to prepare it in advance, store it in the refrigerator in a well-sealed container.
