Mini Cannellini Bean Burgers

Today an alternative recipe: mini cannellini bean burgers.

Great as a second course but also to stuff mini buns for an appetizer or a tasty starter.

At least once a week I prepare legume patties or burgers with chickpeas, beans, or lentils, my kids love them. Usually, I blend vegetables with the legumes as well, but this time I made mini burgers with only cannellini beans and I must say they are really very good. I accompanied them with cauliflower mayonnaise and a simple tomato sauce.

This time I made them small, but of course, you can make them larger and you’ll get fewer, but the goodness will be the same.

Ingredients

  • 500 g canned cannellini beans (2 cans)
  • 100 g grated Parmesan cheese
  • to taste salt
  • 1 bunch parsley
  • to taste breadcrumbs (for breading)
  • to taste coarse cornmeal (for breading)
  • 1 pinch pepper

Let’s Begin!

  • Making the mini burgers is very simple, just blend all the ingredients together, so put the drained beans, grated Parmesan cheese, parsley, salt, and a grind of pepper in the mixer, close the mixer, and turn it on. Mix until you get a homogeneous, soft but workable mixture. If it turns out too soft, add a tablespoon of breadcrumbs.

  • Remove the mixer blades, if desired transfer the mixture to a bowl, and start forming balls by taking a small amount of blended beans (about 40/45 grams). Place the mixture in the palm of your hand and rotate with the other hand to shape. Place on a plate.

    In a bowl, combine breadcrumbs and coarse cornmeal, mix to blend them, then roll the balls in the mixture. Once breaded, place them on a baking sheet lined with parchment paper and press them slightly to form the burgers.

  • Bake in a preheated oven at 375°F (190°C) for 15/20 minutes. Serve with sauces and a nice fresh salad. But first, take a photo, post it on social media tagging me (unaricciachepasticcia) and let me know if you made them for dinner or an appetizer.

Una Riccia’s Tips

If you don’t have coarse cornmeal, you can use well-crushed unsweetened cornflakes or pulse them in the mixer. When you press them on the baking sheet, don’t do it too much because they will spread a bit on their own.

You can freeze them and take them out when needed, alternating with a piece of parchment paper to take the amount you need. So, in a container or freezer bag, place a burger and a piece of parchment paper, then another burger and another piece of paper, and so on.
