Eggplant Rolls with Sauce

Simple and tasty eggplant rolls with sauce, easy to make in advance and you can also cook them in a pan.

If you prefer, you can replace the chicken with ground beef or even with sausages for an extra flavor, but I can guarantee they’re really good as they are.

A flavorful and light main course since there are no fatty meats or any kind of cured meats.

Ingredients for the eggplant rolls

  • 3 black oval eggplants
  • 10.5 oz chicken breast
  • 1 Tropea red onion
  • 2 zucchini
  • 1.1 oz grated parmesan cheese
  • to taste salt
  • 1 pinch black pepper (ground)
  • 10.5 oz béchamel
  • 14 oz tomato sauce
  • 1 teaspoon dried oregano
  • 1 tablespoon extra virgin olive oil

Steps for Eggplant Rolls with Sauce

  • Prepare the béchamel, you can follow my recipe or even buy the ready-made one.

  • Remove the stem from the eggplants and then slice them not too thinly.

    Grill them on a cast iron grill for a few minutes on each side, they just need to soften, set aside.

  • Chop the chicken breast using a chopper or meat grinder and grate the zucchini after trimming and washing them.

  • In a large pan, sauté the finely chopped red onion for a few minutes, then add the chopped chicken.

    Let it brown well, stirring with a wooden spoon, it will take 5 minutes, then add the grated zucchini.

  • Continue cooking for another 6 minutes, season with salt and pepper, add parsley and off the heat add half the béchamel and the grated cheese.

  • Now take the grilled eggplant slices and fill them with a generous spoonful of filling, roll them to form a roll.

    As you fill them, arrange them on a baking dish lightly greased with extra virgin olive oil.

  • All that’s left is to season the tomato sauce with a pinch of salt, some pepper, dried oregano, and 1 tablespoon of extra virgin olive oil and distribute it over the eggplant rolls with sauce.

  • Finish with the remaining béchamel, bake on the center shelf of the oven and cook the eggplant rolls with sauce at 356°F static oven for 20 minutes.

Tips and Variations for Eggplant Rolls with Sauce

If you want a richer filling, add 1 crumbled sausage at the end of the chicken breast cooking in the pan.

You can make them tastier with some speck cubes or slices of cooked ham or even with smoked provolone cheese.

You can cook the Eggplant Rolls with Sauce in a pan, in this case, season the sauce and put it in the pan, add the rolls and cook them with the lid on for 10-12 minutes.
