Today’s recipe is a base you can dress as you like: whole wheat dumplings without potatoes.
Easy and quick to prepare a great first course, they only require a bit of skill if you want to stripe them, otherwise, you can leave them smooth and it will be a breeze to make them.
These dumplings made only with water and flour are a valid alternative to the more classic potato dumplings that require a few more steps. Today I made them with whole wheat flour for a more rustic flavor, they are perfect to dress with a great meat ragù, some vegetables, or a good fish sauce. In short, you can have fun as you like because they are excellent and very versatile.
You can leave them smooth or stripe them with a gnocchi board or a fork, just make four or five to get the hang of it and make them beautiful.

Ingredients
- 15.87 oz whole wheat flour
- 2.11 cups water
- to taste coarse salt
Tools
- 1 Small Pot
- 1 Scale
- 1 Gnocchi Board
- 1 Wooden Spoon
- 1 Rolling Board
- 1 Dough Scraper
Let’s Start!
Place all the water in the pot and lightly salt it, bring it almost to a boil then turn off the heat and pour in the flour all at once. Stir and combine with a wooden spoon initially, when the water is absorbed and a dough begins to form, turn the dough onto a work surface being careful not to burn yourself.
Continue kneading with your hands, quickly as it will be hot, until you get a nice compact dough, soft but well workable. Take a small piece of dough and form a rope the thickness of a finger and from this cut dumplings about half an inch long using a dough scraper. As you do this, keep the rest of the dough covered with a cloth.
Continue until the dough is used up. We can leave the dumplings smooth or stripe them using a gnocchi board or a fork. Take one dumpling at a time and pass it over the stripes, pressing lightly with your thumb.
To cook the whole wheat dumplings without potatoes, it takes three or four minutes in plenty of salted water, then we drain them and dress them as we like.

When you are forming the dough rope, it will not be necessary to add flour, but you will need to lightly flour the dumplings before placing them on the tray during preparation to prevent them from sticking to each other.
