Cod Bites with Rosemary, delicious breaded cod cubes with breadcrumbs and rosemary, perfect accompanied with French fries (to the delight of children) or with a nice salad. Great as a dinner saver, they are prepared in less than half an hour.
I used frozen cod loins, cut them into pieces of about 0.8 inches and let them thaw. If frozen, they are easier to cut. Then, I dipped them in beaten egg and breaded them with breadcrumbs and chopped rosemary needles. Once ready, I fried them in a pan. If you want, you can also bake them in the oven or air fryer until golden brown.

Ingredients
- 10.6 oz cod or hake, fish sticks, frozen
- 2.8 oz breadcrumbs

Steps
First, place the cod on a cutting board and with a knife cut it into pieces. If you prefer, you can also use tuna or swordfish. In a plate, beat the eggs with a pinch of salt and add the cod. Let it marinate for about ten minutes.
Meanwhile, wash the rosemary, pat it dry with paper towels (or a clean cloth), and chop it finely. Put the breadcrumbs in a plate, add the chopped rosemary, and finally the bites of cod, covering them well with the coating.
Now, proceed with cooking.
Heat the olive oil in a pan, once it’s hot fry the fish bites, turning them from time to time, until golden. As they are ready, lay them on kitchen paper towels and serve hot.
