A very simple, quick, and tasty idea, perfect to offer as a cold appetizer. The smoked salmon and ricotta rolls are prepared in a flash, are delicious, and present well on the table. Just season the ricotta with herbs, pepper, and lemon zest, then assemble the rolls with salmon slices. If desired, you can then “bread” them with sesame seeds… try this easy recipe yourself!

Ingredients
- 3.5 oz smoked salmon (in slices)
- 3.5 oz ricotta (or other creamy cheese)
- lemon zest
- sesame seeds
- basil
- black pepper
- extra virgin olive oil
Tools

Preparation
Place the ricotta in a bowl, add a pinch of pepper and the grated zest of about half an untreated lemon.
Also add a couple of chopped basil leaves, or other herbs to taste (thyme, oregano, parsley…).
Mix well with a fork until the ricotta is nice and creamy.
Arrange the salmon slices on the work surface, cut them in half if they are too long.
Spread the ricotta on each slice and roll them to form rolls.
Pour a generous handful of sesame seeds onto a plate. Lightly oil the rolls with extra virgin olive oil, then roll them in the seeds.
The smoked salmon and ricotta rolls are ready!
I recommend letting them marinate in the refrigerator (closed in a container) for at least half an hour before serving.
Tips and Variations
You can replace the ricotta (in whole or in part) with other creamy cheeses like Philadelphia or robiola.
The step with the sesame seeds is optional.
You can flavor with basil (Genoese, Greek, red, etc.) or with mint, thyme, oregano, parsley, dill.
You can “tie” the rolls with a strand of chives.
Choose a good quality smoked salmon, with long and regular slices.
