Raspberry Tiramisu

A summer dessert and very fresh made without turning on the oven and without using raw eggs in the cream as in the classic tiramisu, so everyone can eat it, including children and pregnant women! The raspberry is my absolute favorite fruit; I find it unique and different from the others and in desserts, I think it pairs very well with creams and chocolate! So if you need a dessert for your evenings with family or friends or a fresh afternoon snack and don’t want to turn on the oven, try this very simple and quick recipe!

Ingredients for the Raspberry Tiramisu:

  • 9 oz raspberries
  • 1 cup heavy whipping cream
  • 3/4 cup sugar
  • Half lemon
  • 1 cup mascarpone cheese
  • 7 oz ladyfingers

Steps

The preparation of the Raspberry Tiramisu is very simple and quick, watch the video HERE.

  • First, we prepare the raspberries. After washing them thoroughly, we put them in a pan and add half of the sugar, the lemon juice, and cook for about 10 minutes. Once ready, let it cool.

  • In a bowl, we put the mascarpone, the cream, the remaining sugar, the cooled raspberry mixture and whip until we get a dense and homogeneous cream. We put a layer of cream in the mold lined with plastic wrap (you can choose the shape of the mold you prefer).

  • Add a layer of ladyfingers soaked in milk. Cover with another layer of cream using a piping bag. Put in the fridge for a few hours then decorate as desired with fresh raspberries.
