A tasty and very simple appetizer idea to make, perfect for all summer menus… Croutons with peaches, speck, and creamy cheese, are prepared in minutes and look great on the table, thanks to their fragrance and color! I quickly grilled the peaches (so they become even sweeter), but you can also leave them as they are. You can create large bruschetta, or small finger foods, if you want to serve them as an aperitif. Here is the recipe, try it because it is really delicious!

Ingredients
- 4 slices bread
- 4.2 oz fresh spreadable cheese (ricotta, robiola, or Philadelphia)
- 3.5 oz speck
- 2 nectarines
- extra virgin olive oil
- pepper
- basil (or other aromatic herbs)

- Grill pan or grill
- Cutting board
Preparation
Wash the peaches, dry them and cut them into wedges. You can leave the skin on or remove it, as you prefer.
Toast the slices of bread on a grill pan (or grill), turning them on both sides.
Grill the peaches as well for one to two minutes, without letting them soften too much. This step is optional, you can leave the peaches natural if you prefer.
Spread the slices of bread with the creamy cheese, place the slices of speck and peaches on top.
Drizzle with a little oil, add a pinch of pepper and a few leaves of basil (or mint or thyme).
Serve the croutons with peaches and speck on a tray or rustic cutting board… they are perfect as a tasty appetizer!
Tips and Variations
You can use nectarines or yellow peaches (removing the skin).
You can replace the speck with prosciutto or bresaola.
You can use Apulian bread, Tuscan bread, or bread from your area, even whole grain if you prefer.
I recommend assembling the croutons just before serving, so the bread remains warm and crispy.
