HOW TO PREPARE THE CLEVER DOUGH

  • LET’S PREPARE THE SOFT AND DELICATE BUNDT CAKE: Separate the yolks from the whites, mix the warm oil with the flour, then add the hot water, warm milk, and grated lemon zest, and knead. Add the yolks two at a time; the dough will be very creamy and thick. Whip the egg whites, add the lemon juice and sugar gradually, and keep whipping. To check if they’re ready, turn the bowl upside down; they should stay firm. At this point, gently fold them into the dough a little at a time, mixing from bottom to top. Pour everything into a greased and floured bundt cake pan of about 9.5 inches (24 cm); if you want, you can use a chiffon cake pan. Sprinkle the entire surface with sugar, then with granulated sugar, and finally add some almonds. Bake at 350 degrees Fahrenheit (180 Celsius) for about 40 minutes but adjust according to your oven and do the toothpick test. Remove from oven and dust with powdered sugar

  • LET’S PREPARE THE SOFT AND LIGHT BUNDT CAKE: Beat the whole eggs with sugar very well using electric whisks until they are fluffy and airy. Add the oil, water, and milk, all warm, then the grated lemon zest and juice. Mix well and pour everything into a greased and floured bundt cake pan of about 9.5 inches (24 cm). Sprinkle as above with sugars and almonds, and bake and cook as above. Remove from oven and dust with powdered sugar
