Ingredients for the bundt cake with almond cream
- 2 eggs (xl)
- 1 3/4 cups all-purpose flour
- 1/2 cup almond cream (I use one made from Avola almonds)
- 1/4 cup sugar
- 1/4 cup vegetable oil
- 1/6 cup water
- 1/2 packet baking powder

Preparation of the bundt cake with almond cream
In the bowl, pour the eggs, sugar, water, and vegetable oil, and work with the electric whisks for a few minutes until the mixture swells and becomes light.
Add the almond cream to the bowl and work with the electric whisks until it blends with the rest of the mixture (it will take a few seconds).
Add the flour and baking powder to the bowl and work with the electric whisks until the mixture is smooth, without lumps, and nicely thick.
Grease the bundt cake pan (using a silicone brush) of 9 inches and flour it, pour in the batter, gently tap the pan on the table, and sprinkle a bit of sugar over the surface.
Preheat the oven to 428°F, once at temperature, bake the cake and cook for 30 minutes, once cooked, let it cool before removing it from the pan.
ADVICE
If the cakes remain less cooked at the bottom than on the surface, place them to bake resting the pan on the baking tray instead of the rack, this will allow you to get evenly cooked cakes.
To check the cake’s doneness, always perform the toothpick test towards the end because each oven is different from the other.
This bundt cake is at its best when dipped in milk, try it!
