Baked Feta with Tomatoes and Olives

Baked feta with tomatoes, olives, onion, and aromatic herbs… a delicious and quick dish to prepare, perfect for the summer season. For the short cooking time, I used an air fryer, but if you don’t have one, you can use a conventional oven. The feta prepared this way is tasty and appetizing, and the herbs give off a delightful aroma when you open the foil… try this recipe, it’s really simple!

Ingredients

  • 8.8 oz feta
  • 7.1 oz cherry tomatoes
  • Half red onion
  • 2 tbsps Greek black olives (or others as desired)
  • 1 sprig thyme
  • parsley
  • 2 leaves mint
  • extra virgin olive oil
  • salt

Tools

  • Air Fryer or oven
  • Parchment Paper
  • Aluminum Foil

Preparation

  • Wash the cherry tomatoes and cut them into pieces. Clean the onion and cut it into wedges or rings.

  • Pat the feta dry with paper towels and cut it into 2 or 4 pieces.

  • Place the tomatoes, onion, and feta in the center of a sheet of parchment paper. Add a pinch of salt (only on the tomatoes), a few leaves of thyme, a handful of parsley, and a couple of leaves of mint.

    Add the olives and drizzle with a bit of extra virgin olive oil (1).

  • Close the parchment paper, then wrap the packet in a sheet of aluminum foil. Do not seal it completely, but leave it slightly open at the top.

    Place the packet in the basket of the air fryer (2).

  • Turn on the air fryer to 375°F and cook for 8 minutes. Then open the packet a bit more and continue cooking for another 3-4 minutes, or until the feta is soft and slightly golden.

    If you don’t have an air fryer, you can place the packet in a ventilated oven at 400°F and let it cook for about 15 minutes.

  • The baked feta with tomatoes and olives is ready, bring it to the table immediately, so it releases all its aroma.

Tips and Variations

You can use different types of tomatoes, slicing them if they are large.

You can add Greek, Taggiasca, green olives, or other varieties as you like. You can also season with oregano or basil.

Adjust the cooking times to your taste, depending on whether you like the cheese more or less soft.
