Boil the fregola in hot water, then toss it in a pan with the other ingredients… try this recipe, it’s really easy and delicious!

Ingredients
- 5.3 oz fregola
- 7.0 oz eggplants
- 10 cherry tomatoes
- 1 clove garlic
- basil (or other aromatic herbs)
- extra virgin olive oil
- salt

Preparation
Wash the eggplant and cut it into cubes. Sauté it in a pan with a dash of extra virgin olive oil and a garlic clove.
Add a pinch of salt, slightly lower the heat, and cook until the cubes are tender.
Add the chopped tomatoes and immediately turn off the heat.
Boil the fregola in salted boiling water and drain it slightly al dente (it will take about 10 minutes, depending on the quality).
Pour it into the pan with the eggplants and let it flavor for a couple of minutes, over high heat.
Finally, add a few basil leaves, or other herbs like parsley and oregano.
The fregola with eggplants and cherry tomatoes is ready, you can serve it immediately or let it rest, it is also great cold!
Tips and Variations
You can enrich the dish with diced feta, canned tuna, sautéed zucchini, or bell peppers.
Adjust the cooking times of the fregola according to the instructions on the package.
If you like, you can add a pinch of chili pepper or sliced red onion.
