Your savory panettone will be perfect either warm or at room temperature.
You can prepare it a few hours in advance (I recommend it) or even the day before, storing it in a food bag and slightly warming it before serving.
Of course, you can vary the toppings as you prefer! Any soft cheese will work, any cold cut will be perfect. Olives are mostly decorative, so if you like them, I suggest keeping them, but you can easily omit them.
In short, use your imagination; if you want to create a vegetarian version, you can substitute the cold cuts with, for example, diced zucchini sautéed in a pan for a few minutes with a bit of oil, salt, and a clove of garlic.
