Spelt Salad with Peas and Turkey

Today’s fresh recipe: spelt salad with peas and turkey.

A fresh, tasty, and nutritious alternative to the usual rice salads or cold pasta.

Rich in nutritional properties and highly satisfying, spelt is a grain that has been part of Italian culinary tradition since ancient times. In this preparation, it is combined with peas and turkey breast, a perfect single dish for hot days, ideal for eating outside, maybe at the beach or in the office.

The spelt salad is easy and quick to prepare, the only thing that takes time is cooking the spelt, but it doesn’t require much work.

I used pre-cooked canned peas and turkey breast from the deli, a thick slice or a piece is perfect for dicing.

Ingredients

  • 10.5 oz pearled spelt
  • 5.3 oz canned peas, drained
  • 3.5 oz turkey breast (thick slice or piece)
  • 3.5 tbsp olive oil
  • to taste salt
  • to taste pepper

Let’s Start!

  • In a large pot, bring water to a boil to cook the spelt. While the water is boiling, thoroughly rinse the spelt by pouring it into a colander and washing it under running water.

    When the water boils, add salt and the spelt. Let it cook for the time indicated on the package (mine took 20 minutes) and stir occasionally.

  • While the spelt is cooking, prepare the dressing, which in this case is very easy to make as it requires no cooking. In a bowl, pour the pre-drained and washed canned peas, then on a cutting board, cut the turkey breast into small cubes. Add to the bowl with the peas.

  • Once the spelt is cooked, drain it, cool it slightly under running water, and add it to the bowl with the peas and turkey. Add olive oil, a pinch of salt, and a grind of pepper, and mix to combine the flavors.

  • Cover the bowl with a lid or plastic wrap and leave the spelt salad with peas and turkey in the fridge for at least half an hour to let all the ingredients absorb the flavors. The spelt salad with peas and turkey keeps well for a couple of days in the fridge in a closed container with a lid or plastic wrap. You can prepare it the night before or early in the morning and have it for lunch or dinner.

    I’ve also tried it with diced mortadella and it is delicious, or with cooked ham.
