As you can imagine, instead of Brie you can use any cheese you like, such as provola, taleggio, etc. Or even stracchino! The only cheese I wouldn’t recommend is mozzarella, because it would give a flavor a bit too delicate.

If you don’t need this savory pie to remain vegetarian, you can add some speck cut into small pieces within the egg and mushroom mixture.

The savory pie with potatoes, mushrooms, and Brie keeps for a couple of days in the fridge. Before consuming it, if you don’t want to heat it, take it out of the fridge an hour earlier.
