I chose to add more cinnamon, followed by star anise, which gives freshness, and smaller doses of nutmeg and cloves because they are very strong. You just have to try them.

Ingredients
- 4 eggs
- 1 1/4 cups gluten-free rice flour
- 3 1/4 cups gluten-free whole rice flour
- 3/4 cup vegetable oil
- 1 cup sugar
- 1 tsp xanthan gum (optional)
- 1 tbsp gluten-free baking powder
- 1 tsp ground cinnamon (gluten-free)
- 1/2 tsp star anise (ground)
- 1 pinch nutmeg
- 1 pinch cloves

Steps
Break the eggs into a bowl, add the sugar, and beat with a whisk.
Add the oil and mix well until smooth. Sift the flours with xanthan gum, baking powder, and spices. Gradually add them and knead.
If necessary, decrease or increase the flour as it depends on absorption. Form a dough and wrap it in plastic wrap. Let it rest in the fridge for 30 minutes.
Roll the dough to about 1/8 inch on a lightly floured surface. Cut cookies with Christmas cookie cutters and place them on a baking sheet lined with parchment paper.
Bake at 338°F for 15 minutes. Remove and let cool. Dust with powdered sugar.
