The magdalenas are small traditional sweets from Spanish cuisine that can be prepared in no time. They resemble classic American muffins and have a delicious crunchy crust on top.
I decided to make them with my trusty air fryer, perfect for this type of recipe and especially when you want to prepare a quick treat. Unexpected guests at tea time? Or at lunch? The dessert is ready in just 15 minutes.
Magdalenas would be the Spanish answer to French madeleines and, just like the latter, should be placed in the refrigerator for an hour before baking. Unlike their French cousins, magdalenas are made in muffin molds.
I decided to flavor my magdalenas with vanilla, but they can also be prepared with the addition of lemon or orange zest, or almond essence.
Magdalenas are perfect when paired with a cup of hot tea or coffee, they are great as a dessert at the end of a meal or as a mid-morning snack for our kids at school.

Ingredients for the magdalenas
- 1 3/5 cups all-purpose flour
- 3/4 cup sugar
- 2/3 cup sunflower oil
- 2/3 cup milk
- 2 eggs
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 pinch salt
- to taste granulated sugar (for garnish)

Preparation of magdalenas
Pour the eggs and sugar into a bowl and beat them with an electric mixer until they become fluffy and glossy. This is the same procedure as for preparing sponge cake.
Gradually add, while continuing to mix with the electric mixer, the sunflower oil. Pour in the vanilla extract and mix carefully.
Sift the flour with the baking powder and add it to the egg and sugar mixture, stirring gently with a spatula.
Place the paper liners in aluminum panna cotta molds and pour the magdalenas mixture stopping 1 centimeter (0.4 inches) from the edge.
Place the containers with the mixture in the refrigerator for an hour.
After the resting time, garnish the surface with granulated sugar. Meanwhile, preheat the air fryer.
Cook at 338°F (170°C) for 12 minutes, then lower the temperature to 320°F (160°C) and continue cooking for another 4 minutes.
Once ready, transfer the magdalenas to a rack and let them cool before serving.
Magdalenas can be stored for a few days in an airtight container.
You can also use the traditional oven for baking. Preheat the oven to 356°F (180°C) and bake the magdalenas for 15 minutes. Always check with a toothpick that should come out perfectly dry.
