Nougat and Panettone Semifreddo Cake

A delicious and very simple dessert, this NOUGAT AND PANETTONE SEMIFREDDO CAKE can be prepared in advance and enjoyed comfortably during holiday lunches/dinners, which will likely see families and friends gathering to celebrate in many homes.

Instead of panettone, you can also use pandoro or even leftovers of other cakes: my only suggestion is to toast these large crumbs of cakes/leavened goods/other in the oven to prevent them from becoming mushy when mixed with creams, whipped cream, and sweet fluid sauces, losing their texture and goodness.

Ingredients

  • 8.8 oz mascarpone
  • 1 cup heavy cream
  • 2.8 oz dark chocolate (coarsely chopped plus a few tablespoons of Nutella or other melted dark chocolate)
  • 1/3 glass alkermes
  • 2.1 oz nougat (chopped)
  • as needed panettone (in pieces)

Steps

  • Alright, alright… I beat the heavy cream with the mascarpone using electric whisks or a stand mixer to obtain a soft and delicious cream.

  • I crumble a couple of panettone slices coarsely and add them to the mixture.

    If you like, you can also toast them in the oven or a non-stick pan for a few minutes to make them nice and crunchy.

    (If the cream is too fluid, add more crumbled and grilled panettone in the oven)

  • then I add a few tablespoons of alkermes diluted with tap water not to get the guests too tipsy huh huh!

    I put these crunchy panettone crumbs in the cream and mix everything well together.

  • I line a loaf cake mold with plastic wrap and pour the mixture in, leveling well on the surface and covering it all, then put this cold panettone cake with cream and nougat in the freezer to take it out at least 15 minutes before tasting it at the table!

    P.S. BEFORE SERVING I put a few tablespoons of Nutella or melted chocolate in the piping bag and make some decorations that will freeze instantly, and we are ready to…eat it!
