The whole wheat pasta and split peas or pasta with dry peas split and peeled in two parts is deliciously creamy.
As for the split peas, I prepare several portions to have a small and practical supply in the freezer: cooking split peas [basic recipe].
By doing so, just thaw them in time and in a few minutes the pasta will be ready, avoiding the use of canned legumes.
Otherwise, remember that dry peas need soaking [12-24 hours].
I made my pasta with pea cream even more delicious by using mixed whole wheat pasta [gnocchetti sardi and mezze penne rigate].
Regarding preparation time, consider:
• 12-24 hours of soaking;
• 40 minutes for cooking peas;
• 10 minutes for cooking pasta.
If you use peas that are already prepared, calculate only the pasta cooking time.
In case of soupy first courses, to avoid glycemic spikes, it is advisable to cook the pasta separately, then rinse it and add it to the broth prepared separately; in this way, the starch released by the pasta in the cooking water is eliminated.

- Difficulty: Easy

Let it cook over low heat until the pea cream reaches the desired consistency, continuing to stir with a silicone spatula.
How long should mixed pasta cook?
I made my pasta with pea cream even more delicious by using mixed whole wheat pasta [gnocchetti sardi and mezze penne rigate with different cooking times: check the different cooking times and choose the lowest or medium time].
In case of soupy first courses, to avoid glycemic spikes, it is advisable to cook the pasta separately, then rinse it and add it to the broth prepared separately; in this way, the starch released by the pasta in the cooking water is eliminated.
Meanwhile, bring the pea cream back to a boil.
Pour the pasta into the pot with the pea cream and mix.
Plate it.
Add a drizzle of raw oil and grind the pepper.
Your whole wheat pasta and split peas is ready.
Enjoy your meal!
The combination with pasta, rice, or other cereals allows better absorption of legume proteins.
In fact, the cereals included in these dishes compensate for the amino acids lacking in legumes, allowing for a complete amino acid profile.
Choose preferably whole grains.
