During the summer, the smell of roasted peppers can be sensed on every street corner. I think peppers are one of the most appreciated side dishes. Today I propose a recipe I love and that my mom always used to make for me! A very simple recipe made with very few ingredients like peppers, tomatoes, onion, garlic, and a bit of oil. It’s the perfect dish because it’s delicious cold and it’s vegan!

Ingredients for Peppers and Tomatoes:

  • 4 peppers
  • 4 tomatoes
  • onion
  • garlic
  • extra virgin olive oil

Steps

The preparation of peppers and tomatoes is very simple and quick. Watch the video HERE.

  • First, cook the peppers in an air fryer or in the oven at 356°F for about 30 minutes. After about 20 minutes, turn them and continue cooking. Once ready, let them cool in the air fryer, then clean them by removing the seeds

  • cut into strips. In a pan, sauté the onion and garlic with a bit of oil. Add the tomatoes cut into pieces

  • Add the peppers. Season with salt and spices to taste and cook for about 30/40 minutes, stirring occasionally.

  • Enjoy your meal!
